Sneaky DIY Fruit Leather - Great for picky eaters!

Picky eaters… a challenge I love to take on! The pickier the eater, the sneakier I get!

My first born was a finicky little guy. When he was a toddler, we had yet to embark on our traditional eating, so I remember making him pasta….a lot! He, consequently became particular in his preferences, constantly refusing anything but grains. For the sheer sake of his nourishment I kicked it into gear and got sneaky. I would make cheese sauces with cauliflower or beets, I threw all kinds of things into his smoothies etc… His palate was eventually expanded and he was ready for the ride when we started following a traditional diet that involved very few grains (of which were soaked/soured). If you have a fussy little (or big) person in your life, this DIY fruit leather is win, win. Nourishment get in, fussiness disappears!

Ingredients
  1. 3 steamed apples (cooking liquid reserved) *Libby's note: I always steam them with the peel...more nutrients!
  2. 1 smallish roasted and peeled beet
  3. 1 sweet potato baked, flesh scooped out
  4. 2 tsp cinnamon ground
Instructions
  1. Twirl around in the blender (add the reserved cooking liquid a little at a time if needed). You want this to be a thick, apple sauce-like consistency.
  2. Spread onto dehydrator sheets covered with parchment paper. You want this to be about an 1/8 inch thick.
  3. Dehydrate for approximately 3 hours at 135'F. *Libby's note: time will depend on thickness.
  4. Remove from dehydrator. Cut into strips using scissors. You can roll em up if you wish but they should be stored in an airtight container or else they will become 'sneaky' fruit crisps. 🙂
